SERVES: 4
INGREDIENTS:
• 1 block firm tofu, well drained
• 2 Tbs tahini (see hints below)
• 2 Tbs soy sauce
• 2 tsp sesame oil
• 2 Tbs mayonnaise
• 1/4 cup chopped cilantro
• 1 heaping Tbs grainy mustard
• 2 Tbs toasted sesame seeds
• 2 Tbs chopped green onion
• Whole wheat bread
• Sliced tomato
• Sprouts
PROCEDURE:
1. Drain the tofu really well and then use a clean kitchen towel to gently squeeze some of the remaining water out of it.
2. Add it to a large mixing bowl with 2 Tbs tahini, 2 Tbs soy sauce, 2 tsp sesame oil, 2 Tbs mayonnaise, 1/4 cup chopped cilantro, 1 heaping Tbs grainy mustard, 2 Tbs sesame seeds and 2 Tbs chopped green onion, and use a potato masher to mash everything until it is nicely combined.
3. Serve it on whole wheat bread with thinly sliced tomato and some sprouts if you like.
HINTS:
• Tahini is basically a sesame seed version of peanut butter. You can find it in health food stores or in the specialty food isles of larger supermarkets.
• Instead of a sandwich, spoon it onto toasted whole wheat bread as you go.
•Substitute 3/4 cup toasted walnuts for the sesame seeds.
